Ingredients:
- 1 eggplant, peeled, halved and sliced
- 2 red bell peppers, cut in 1-inch strips
- 1 green bell peppers, cut in 1-inch strips
- 1 onion sliced
- 1/4 cup extra-virgin olive oil
- Fresh basil – for garnish
Directions:
Preheat oven to 350F. Place eggplant, peppers and onion on a non-stick baking dish. Drizzle with olive oil.
Bake in the oven for 20 minutes, basting regularly. Arrange vegetables on serving dish and garnish with fresh basil.
